Summer is just around the corner here in Melbourne and I’ve been craving lots of fresh fruit and salads lately. So I put one and one together and created this bright, refreshing, fruity summer salad.
This summer salad is super easy to make. It only uses 8 ingredients and takes 5 minutes to put together.
It might sound a little strange to put watermelon and blueberries into a salad together with rocket and cucumber, but trust me, it’s delicious! It makes a perfect side salad for a (vegan) bbq or to eat on its own for a light and yummy meal.
Making this salad makes we want to eat more fruit and raw foods again. and all the colours just make me really happy!

8-Ingredient Summer Salad

Ingredients
- 60 g rocket
- 1 handful mint leaves
- 1 handful basil leaves
- 1/2 small cucumber
- 1 slice watermelon (see photo for size reference)
- 40 g blueberries
- 1 tbsp hemp seeds
- fresh lemon juice
Instructions
- To make this salad, combine the washed rocket, mint leaves and basil leaves into a bowl.
- Then cut up the cucumber and watermelon and add it to the bowl too.
- Finally top the salad with some fresh blueberries, hemp seeds and a squeeze (or more) of lemon juice. Enjoy!
