Simple Passionfruit Parfait

This simple passionfruit parfait is made within a few minutes and requires only 3 ingredients. It’s absolutely delicious and a great “quick and easy” breakfast. However, you can also eat this as a dessert if you feel like something a little sweet, fruity and crunchy.

This recipe is an American style yoghurt parfait as it served in layers. French parfait is quite different and a lot more complex to make (especially a vegan version). It’s a frozen dessert that is traditionally made with lots of egg yolks as well as cream and sugar.

Obviously, passionfruit is one of the ingredients. The other ingredients are coconut yoghurt and granola. Of course, you can swap the coconut yoghurt for another plant-based yoghurt of your choice. I like to use my Easy Nut Granola Clusters for the granola part of the dish. They’re really tasty and simple to make and I like how chunky they are. Of course, you can also use store bought granola if you don’t have time to make your own granola.

I really like the simplicity of this parfait and love how the acidity of the passionfruit cuts through the fattiness of the coconut yoghurt. It also balances out the sweetness of the granola, making this a really lovely dish.

Instructions
 

  • Add 1 tablespoon of coconut yoghurt (about 25g) into a glass.
  • Next, add the granola clusters on top of the coconut yoghurt.
  • Then, add the rest of the coconut yoghurt on top of the granola clusters.
  • Finally, cut the passionfruit in half and scoop the insides on top of the coconut yoghurt. Enjoy!
