Roughly chop the almonds, cashews and macadamias and add them to a large bowl.
Add the rolled oats, ground cinnamon and salt to the bowl. Mix everything together.
Now add the vanilla bean paste, rice malt syrup and neutral oil. Mix everything until combined. The mixture should be quite sticky at this time.
Transfer the mixture onto a baking tray lined with a silicon sheet or baking paper. Evenly distribute the mixture across the sheet. It should be around 1 cm thick.
Bake the granola at 160°C fan for 18-20 minutes. Turn the tray by 180° after 10 minutes to ensure even baking.
Let the granola cool down completely after baking. Then, break it up into large clusters. They are now ready to be eaten. Enjoy!
