sweet potato
1/2
tbsp
olive oil
salt and pepper to taste
Smoked Paprika Aioli

tbsp
vegan mayo
1/4
tsp
smoked sweet paprika
1/2
tsp
lemon juice
1/2
clove
garlic
(or 1 clove for extra garlic flavour)
Instructions
Sweet Potato Wedges
Preheat the oven to 180°C fan.
Cut the sweet potatoes into wedges (about 7cm long and 3cm thick) and place them onto a baking tray lined with baking paper.
Drizzle olive oil on top of the sweet potatoes and season with salt and pepper. Give everything a good toss.
Roast the sweet potatoes for 25 minutes at 180°C fan.
Smoked Paprika Aioli
Mix the mayo, smoked paprika and lemon juice.
Grate in half a clove of garlic (or a whole clove for extra garlicky flavour) and mix it with the mayo.
Serve the sweet potatoes hot together with the aioli.
