Instructions
Cut a thin, circular slice from the apple and place it in a dish of water to stop it from oxidising. This is going to be the garnish.
Cut another 1/8 of the apple into small chunks and place the pieces in the shaker.
Peel the ginger and add it to the shaker.
Muddle the apple and ginger in the shaker. If you don't have a muddler, the back end of a wooden spoon or rolling pin work well too.
Top up the shaker with ice.
Pour in the lemon juice, simple syrup, apple juice and chamomile tea.
Add the Boston glass (or lid) of your shaker and vigorously shake it for 20 to 30 seconds until your hands are icy cold.
Strain, quickly and with confidence, into a chilled martini glass.
Garnish with the round apple slice.
