Add the desiccated coconut to baking tray lined with baking paper. Toast the coconut for 3-4 minutes until golden brown. Make sure to keep a close eye on it, the coconut goes from golden and toasty to burnt really quickly!
Pit the dates and add them to a food processor together with the almonds and cashews. Pulse until the mixture comes together.Tip: If the dates feel dry, soak them in water for a few minutes before adding them to the food processor
Transfer the mixture from the food processor into a bowl.
Add the peanut butter, vanilla bean paste and 30g of toasted coconut and mix everything together until combined.
Place the rest of the coconut onto a plate.
Take out a tablespoon at a time and roll the mixture into balls. Then, roll the balls in the desiccated coconut on the plate.
Store the energy bites in the fridge for up to 1 week.
